A great vegan pesto for a great start of the day

Pesto is one of my favorite spreads. Its so versatile! you can spread it on bread or snack on it with crackers, you can use it as pasta sauce or as salad dressing…
It can also have the basic ingredients but you can always change it up. Most importantly - its supper healthy and super delicious!

Usually I make my pesto with basil, olive oil, pine nuts, garlic and Parmesan cheese. Then I add in a little something different every time. Sometimes I add another green like kale. cilantro or arugula. I also play with the nuts and add some walnuts or pumpkin seeds. the additions boost the nutritional benefits tremendously!

This time I tried something new and it came out AMAZING so I had to share :)

The secret is CASHEW!

Here is the recipe:

1/2 cup cashew pieces
2 cups fresh basil leaves
1 clove garlic
1/2 tsp salt
pinch of pepper
1/2 cup pine nuts
1/2 cup olive oil

Instructions:

First you soak the cashew in water for at least a 1/2 hour. Then you drain it and add all the ingredients except the olive oil to the food processor.
Blend the ingredients to a paste and the start adding the olive oil until you reach the right consistency for you. Adjust salt and pepper to taste.
